FOR THE BASE :
240 g of chocolate chip cookies
120 g of melted butter
FOR THE STUFFING :
250 g of cottage cheese
3 tablespoons of icing sugar
½ vanilla bean

Chocolate, ricotta and fresh fruit baskets are perfect single portion sweets to end a dinner with friends. An easy recipe to prepare and, net of the rest time in the freezer, ready in just 20 minutes.
These tartlets are really delicious: a base of melted butter and chocolate biscuit gathers a soft and creamy filling of ricotta flavored with vanilla.To give liveliness and color a diced strawberry and mango. Moreover, you can make the base in advance and complete the baskets just before serving them, choosing the fruit you like best.
The single-portion fruit desserts, pastries, baskets are a pleasant idea for the summer, try also the chocolate and raspberry baskets or the baskets with white chocolate and lime.
HOW TO PREPARE: CHOCOLATE BASKETS, RICOTTA AND FRESH FRUIT
1. Start preparing the baskets from the base: in the mixer pulverize the biscuits, transfer them to a bowl and mix them with the melted butter.
Transfer the mixture into 6 festooned molds of 3-4 cm in diameter and level with the back of a spoon to cover both the base and the edges.
Place them in the freezer for at least 45 minutes.
Prepare the filling: in a bowl mix the ricotta with the icing sugar and vanilla seeds, in order to obtain a soft and homogeneous cream.

2. Remove the baskets from the freezer and gently turn them out onto the serving plate. Transfer the prepared cream to each one and level.
